Deep garnet red with ruby highlights. Expansive, complex bouquet, with the traditional notes of spices, wood and licorice. Very soft on the mouth, pleasing and elegant.
The traditional method followed by Settimo means fairly lengthy fermentation on the skins, followed by a year in concrete and 24 months maturing in big (25-35 hectolitre) untoasted 10-20 year old French oak casks.
