This wine comes from the best plots in Javernand's 10ha holding. The vines are between 40 and 70 years old, and as such the winemakers believe it requires at least a year of bottle ageing before release to get the most expressive aromas. Soft, delicate but richly flavoured - this wine lives up to the reputation of Chiroubles as one of the most elegant Beaujolais crus. It has distinctive aromas of peony, violet and fresh red fruits, and a palate of strawberry and cherry softened with spices and gamey sweetness, well balanced with nice acidity and silky tannins. A very versatile wine, good with poultry, pork and grilled meats, but also great with charcuterie - cold meats, pate, cheese - and salads and pastry dishes. It can also be served lightly chilled.
100% Gamay, made by traditional Beaujolais whole bunch vinification, with 10-14 days of semi-carbonic maceration to extract maximum fruitiness, youth and flavour and 6-8 months in tank to develop the aromas.
