A stellar year for Settimo, although more of a mixed bag for the region generally. Intense garnet red in colour with orange highlights, the complex bouquet shows strawberry and rose petal, forest floor overtones and notes of cinnamon, vanilla and wood. The palate has appealing tannins, silky and firm with a light touch of liquorice that is typical of large cask ageing. Will develop very nicely but is also perfectly drinkable now.
The traditional method followed by Settimo means fairly lengthy fermentation on the skins, followed by a year in concrete and 24 months maturing in big (25-35 hectolitre) untoasted 10-15 year old French oak casks.
